Technical Tasting / Viticulture and Vinification/ Review major and minor wine producing regions, fortified wines, blending wines and food & wine pairings. Conducted 9 to 6 for 4 days and nights with certificate testing and ceremonies concluded on day 5. Cost: $650 per student - Ideal for candidates from other US / International locations.

Registration is very limited and you should have some wine training or practical experience.

These books require extensive reading so advanced registration allows us to mail them to you so you can get started now on mastering wine theory and tasting!
The selection of books used for the class have the most comprehensive and structured wine information required to attain the expertise needed to pass the testing.

DVD videos including The History of Wine and Distilled Spirits by Modern Marvels of the History Channel and Small Vineyard Management Videos that include complete first hand viewing of managing a vineyard site from Bud Break to Harvest and in the care required in the winter months as well. These are viewed and discussed.

Foundation / Intermediate
Sommelier Certificate Course

Every Saturday 9-3p at Le Cordon Bleu, Miami Campus

--Eight (8) Week Course--

This course prepares the student to become knowledgeable in all the major wine regions of the world. Wine tasting techniques are taught using your sense of sight, smell and taste to develop an initial and then final conclusion as to where the wine comes from. It also requires you to develop an evaluation technique to describe which grape varietal(s) are used by the wine makers and be able to explain some of the techniques used to vinify the wine.

A special wine tasting and dinner is given as a class with over 50 to 75 wines tasted. It is sponsored by major beverage distributors in the state.

Combined with tasting approximately 8 to 10 wines per class over the remaining 15 segments the student is exposed to between 150 to 200 wines. These wines are tasted in special Riedel Crystal Vinum series tasting glasses. Each tasting is led by leading wine makers or certified wine experts.

Upon successful completion of the course a two-part test is given to the students. First is a one (1) hour written true/false, multiple choice and essay type test followed by a written blind tasting examination of six (6) wines by the USSA board of examiners. Passing students will receive a Foundation Sommelier Certification at a special function for their graduation.

--Recommended for the novice to having some basic knowledge level - given twice (2) per year.

Advanced Sommelier Certificate
Wine, Spirits & Tobacco Course

--Seven (7) Day Immersion Course at Wente Vineyards, Livermore, CA--

World class intructors led by Karl Wente, Wine Master; Carole Meredith, Professor Emeritus, UC DAVIS Enology; Rick Garced, Wine Master; and others in Livermore and Napa Valleys.

This course prepares the student to become a bar manager / head sommelier level of knowledge and includes wine, beer, spirits, coffee and cigars.

Individuals are capable of leading a world-class wine program, managing bar outlets and completing all restaurant and bar staff training. Materials needed to accomplish this are supplied as a part of the supplemental materials.

A special wine tasting and dinner is given as a class orientation. All breakfast, lunch and afternoon breakout snacks are included in the course tuition fee.

Student will taste approximately 25+ wines per day over the course. These wines are tasted in special Riedel Crystal Vinum series tasting glasses. Each tasting is led by leading wine makers or certified wine experts.

Upon completion of this course individual will be eligible to take the Advanced Sommelier Certificate (3) part test: theory, practical service, tasting. Upon completing a total score of 75% or better the individual will be awarded the certificate by the U.S. Sommelier Association board of directors at a special function.

--Recommended for those that have formal wine training already, by application only - only given 1 time per year.
